Backup Files on Server - suggestions?

Hi. I'm having a tough time backup up the files on my webhost. It's a linux server, using Hsphere. I use WebShell to archive the folders, but the Uploads directory is just too big, so I have to do them individually.

anybody have ideas on a script or other ideas on how to tar the entire site at once? thanks!!!!!

When I use FTP, it doesn't archive the files and folders, and therefore, it doesn't retain the permissions. I don't want to have to reset the folder/file permissions if I need to do an emergency reinstall.

Can't you just back up the uploads folder separately?
I assume you dont want to backup all your video files with every single backup anyway
